In simple terms, UPF refers to food that undergoes extensive processing during its production. This could involve adding emulsifiers, preservatives, or artificial flavors – things you wouldn't typically use in your own kitchen. Surprisingly, a large portion of our diet in the UK and the USA, around 60%, is made up of UPF. This statistic is quite concerning, given the evidence linking ultra-processed foods to various health issues, as pointed out by Dr. van Tulleken.
Dr. van Tulleken emphasizes that he's not trying to create panic, sharing that even his own children consume a significant amount of UPF – around 20% to 30% of their calories. The focus here is not on freaking out but understanding that incorporating more whole foods into your diet can have numerous benefits. Dr. van Tulleken also highlights the challenge of reducing UPF intake, acknowledging that it can be difficult due to the addictive nature of these foods.
It's important to note the distinction between ultra-processed foods and processed foods like tinned jams, homemade bread, or tinned fruits and vegetables. Dr. van Tulleken even mentions that the antioxidant in tomatoes from tinned tomatoes is more easily absorbed than from fresh ones.
Explaining the significance of dietary patterns, Dr. van Tulleken suggests avoiding a diet built solely on ultra-processed foods. He uses the analogy that if you were stranded on a desert island, a stack of burgers would be more beneficial for survival than a pile of broccoli. However, he acknowledges that, in reality, various factors might lead people to consume UPF.
The good news is that there are alternatives available if you're interested in reducing your UPF intake. Many individuals are actively trying to include more whole foods or minimally-processed foods in their meals, even if it's not possible to eliminate UPF entirely.
